Fruit Enzyme

Ok.. this is kinda backdated. hehehe.

It all started with a craze. And some free-time. And so on Spore's National Day (9th Aug), we went to get the ingredients to do it. Our friend, SP, told us how to do it, and Jason's mum (an expert) also advise a little on how to do it. These enzyme is a health stuff lah.. For us, it's like a boost of vitamins for us. Same thing like the one kiwi I eat every morning. (Free-supply from his mum :)). I don't feel sleepy or lethargic. Also, it detoxifies your body. After drinking this, you will bound to go to the toilet or let go lots of gas. A simple procedure for those who wish to do it.

Ingredients used:
-Fruits you want to do the enzyme.
(For this case, I chose dragon fruit - sweet, and lemon - sour, so it's balanced, not too sweet, and not to sour, or it can be just a single fruit, no combination).
E.g. of combinations:
- dragon fruit + lemon
- cherries + dragon fruit + kiwi
- dragon fruit + beetroot
- beetroot + kiwi
- strawberries + rose (buds) flowers
- pineapple + lemon (very strong, for body cleansing)

- Honey - The best will be flower honey (DO NOT USE any forms of SUGAR. It's advised not to as it is not healthy as it's already in crystalized form, and too much of it can lead to diabeties, and other stuffs).
- OLIGO 900 enzyme (got this from his mum. It's available at any organic shops)

*Note: To get the real actual tastes of the fruit, using Oligo (enzyme) is enough. Honey is added just in case if it's too sour, or to neutralise the tastes.
Apparatus needed:
- 1 empty, dry bottle (latch/ screw cover top - E.g. Ikea latch air-tight bottles)
- Plastic hand gloves (to ensure cleanliness)
- DRY knife and DRY chopping board (must not be the ones that you cut meat on)
- Plastic wrap (for sandwiches, and etc)
- Strainer (steel), funnel (to strain into the bottle)

Procedure:
1. Place all ingredients and apparatus near you.
2. Preparation of the fruit
- Wash the fruit, wait till it dries thoroughly. (use fan :))- Peel the skin of the fruit (if needs peeling) OR if with skin, just wait till it dries fully
- Slice the fruit thinly.

3. Do layerings. (Like how they put bricks and cement in between. :)
- Depending on how sweet or sour you want, arrange the slices as though you're stacking up bricks.
- In between the slices, put a tablespoon each of honey and olio.
- Abbreviations used: Dragon Fruit (DF); Honey + Oligo (HO)
- The flow: DF -> HO -> DF -> HO -> Lemon -> HO -> DF -> .....loop it.
- For the empty spaces in between, just cut smaller pieces of DF & lemon and fill in the spaces.

4. Do item #3 until the jar is 3/4 filled. Then, slowly cover up the surface of the fruit with Olio.
5. Use the plastic wrap and cover the top. Then close the cover of the bottle, and wrap another round of plastic wrap over it.
6. Store in places away from the sun.
7. Wait for 3 weeks. After 3 weeks, use the gloves, and open up the bottle.
8. Pour it into the strainer, and through the funnel, into a clean screw-capped glass bottle. Leave the bottle screwed lightly for 3 days at room temperature. (Reason: If it's screwed up too tightly, explosion may occur because of the fermented gasses in it).
9. After 3 days, if not consumed, remaining must be put into the fridge (not freezer), bottle must be upright.

L-R: Our dragon fruit + lemon enzyme; we just got 3/4 of bottle only

Lastly, to drink, the ratio is 10:1. 9 parts water (warm), 1 part enzyme, in a normal mug. Do not directly pour the enzyme into hot water as it will kill all the good bacterias. Best taken in the morning, before wash up. Or at night before sleep. So far, it is not known of what is the best dosage, but I'm drinking every alternate days. :) Some of Jason's mum's "collections":

L-R: dragon fruit + lemon (no honey); pineapple + lemon (lil honey); papaya + tomatoes + herbs

L-R: strawberries + rose buds; bitter gourd + herbs + brown rice vinegar (this one have to keep for 3 months)

4 kay-pohs:

  1. The steps seemed kinda complicated ler. Can you make and sell ar? Hehe

  2. complicated meh? it's just putting honey and oligo & fruits layer by layer ma. if lazy, can just throw everything in and put honey over it. Hehehe.

  3. I was lost at the part where you're supposed to screw the bottle top lightly or it'll EXPLODE!!
I'm very ignorant when it comes to things like this.
So how does it taste like? I think it should have some wine-like taste right? Since it's fermented fruits

  4. yeah, it smells like wine... havent tried grapes though.. but the cherries that his mum made smelled and tasted like wine. cherries are the most expensive so far. yeah, u have to screw it lightly. if u need to turn 2 rounds to screw tightly, you just need to turn 1 round for this case.his mum's fren's bottle exploded in the mid of night. so geng.
